Carrot Cake Energy Bites

As someone who works out early in the morning, I'm always looking for a quick pre-workout snack that's easy to grab on my way out the door. While these were developed with that in mind, the further we get into quarantine the more additional purposes I'm finding for these tasty treats.


I'm loving them as a mid-afternoon pick me up during a busy work day as well as a quick breakfast between morning meetings. They go amazing with coffee and hit that sweet treat craving very nicely. I also love that they come with the sneaky additional of some veggies with the carrots! They are no bake, vegan, gluten and dairy free making them both easy to make and easy to share.

Ingredients:

- 1 cup grated carrots (100g) - I find using a cheese grater is the easiest

- 1 cup rolled oats (90g)

- 1/2 cup nut butter (80g)

- 1 tbsp chia seeds

- 1 tsp vanilla extract

- 1 tsp cinnamon

- 1/4 tsp salt

- 1/4 tsp ginger (optional)

- 1/4 tsp nutmeg (optional)


Directions:

- Combine all ingredients in a bowl and mix well

- Roll into 10 equal sized balls and refrigerate


Macros for one ball(made with peanut butter), 144 calories, 4p/14c/8f (2g fibre)
